- In a bowl, mix cream cheese, chopped dill, salt, pepper, and a squeeze of lemon juice until smooth.
- Slice cucumbers thinly, about 1/8 inch thick.
Assembly
- Generously spread the cream cheese mixture onto slices of bread.
- Layer cucumber slices on top of the cream cheese, overlapping for added texture.
- Top with another slice of bread, then cut into quarters or halves, and serve.
Notes
Serve as a light lunch or snack with a side of fresh fruit or light soup. Store any leftovers in an airtight container in the refrigerator.
