For the Sandwiches
  • 2 slices bread White or whole grain works well.
  • 1 medium cucumber Choose firm cucumbers for the best crunch.

Method
 

Preparation
  1. In a bowl, mix cream cheese, chopped dill, salt, pepper, and a squeeze of lemon juice until smooth.
  2. Slice cucumbers thinly, about 1/8 inch thick.
Assembly
  1. Generously spread the cream cheese mixture onto slices of bread.
  2. Layer cucumber slices on top of the cream cheese, overlapping for added texture.
  3. Top with another slice of bread, then cut into quarters or halves, and serve.

Notes
