Cooking Steps
  1. In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, and bring to a boil.
  4. Add the spaghetti and Italian seasoning, and stir well.
  5. Reduce heat, cover, and let simmer until the spaghetti is cooked, about 10-12 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with Parmesan cheese and garnished with parsley if desired.

Notes
