Ingredients
  

For the dressing
  • 1 teaspoon turmeric adds a bright, earthy flavor; fresh turmeric root can be used for a more potent kick.
  • 1 tablespoon tahini provides a creamy consistency and nutty taste; swap with Greek yogurt for tanginess.
  • 1 clove garlic, minced for aromatic depth; use garlic powder if you’re short on fresh garlic.
  • 1 teaspoon honey balances the flavors with sweetness; agave syrup is an excellent plant-based alternative.
  • ¼ teaspoon kosher salt enhances all the flavors; replace with sea salt if preferred.
  • 2 tablespoons apple cider vinegar provides tangy depth; lemon juice can also be a refreshing option.
  • cup extra virgin olive oil enriches the dressing with healthy fats; avocado oil works beautifully too.
For the salad
  • 2 cups cooked shredded chicken a great protein base; rotisserie chicken saves time and adds a wonderful depth of flavor.

  • 1 cup slaw mix or finely shredded cabbage gives crunch; kale can be used for a more robust salad.
  • 1-2 pieces green onions, finely chopped lends freshness; shallots can be used for a different taste.
  • ¼ cup sulfite-free raisins provides sweetness; cranberries or chopped dates can replace raisins for variety.

Method
 

Preparation
  1. In a medium bowl, add the turmeric, tahini, garlic, honey, salt, and vinegar, stirring to combine.
  2. Drizzle in the olive oil and whisk until smooth. Alternatively, add all the ingredients to a blender and blend until smooth.
  3. In a large bowl, add the chicken, carrots, slaw or cabbage, green onions, and raisins.
  4. Add the dressing, stirring to combine.
  5. Allow to sit for 15 minutes for the flavors to combine.
  6. Serve over greens, if desired.

Notes

Keep any leftovers in an airtight container in the fridge for up to three days. Can be frozen in individual portions for up to a month. Leave out the dressing until ready to serve.
