Ingredients
  

  • 1 1/2 cups long grain rice, rinsed and drained
  • 2 1/2 cups chicken broth or vegetable broth or water
  • 8 ounces tomato sauce
  • 3 tablespoons butter
  • 1/2 small white onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño minced, seeds and ribs removed (optional)
  • 1 teaspoon ground cumin
  • 1/4 teaspoon chipotle chili powder (or more for heat)
  • 1 teaspoon kosher salt, plus more to taste
  • fresh cilantro, for garnish
  • lime wedges, for serving (optional)

Equipment

  • Rice cooker For cooking the rice evenly
  • Knife For chopping onion and jalapeño

Method
 

  1. Add all ingredients except cilantro and lime wedges to rice cooker. Stir well to combine.
  2. Cook according to manufacturer’s instructions until rice is fluffy and tender.
  3. Let stand 5 minutes before fluffing with a fork.
  4. Transfer to a serving bowl, garnish with cilantro, and serve with lime wedges.

Notes

This recipe makes moist rice. If you prefer a drier texture, reduce the broth by 1/4–1/2 cup. Jalapeño adds depth and heat, but feel free to omit for a milder dish.
