Ingredients
  

  • 1 16-ounce bag baby carrots
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons ranch seasoning
  • fresh parsley, for garnish (optional)

Equipment

  • 9x13 baking dish or sheet pan
  • mixing spoon for tossing carrots

Method
 

  1. Preheat oven to 400°F.
  2. Pat carrots dry to remove excess moisture.
  3. Spread carrots in a baking dish, drizzle with olive oil, and sprinkle ranch seasoning. Toss to coat.
  4. Roast for 25–30 minutes, stirring halfway through, until golden and tender.
  5. Broil for the last 1–2 minutes for extra color. Garnish with parsley and serve.

Notes

For extra color, broil the carrots for the last 1–2 minutes. Leftovers reheat best in the oven or air fryer.
