Preparation
  1. Preheat your oven to 425 degrees Fahrenheit and grease a large baking sheet or dish to prevent sticking.
  2. Peel and cut the beets into 1/2 inch cubes to ensure they cook evenly.
  3. Toss the beets with olive oil and sea salt until well coated.
  4. Spread the beets onto the greased baking sheet in an even layer to promote even roasting.
Roasting
  1. Bake for 20 to 30 minutes until soft, stirring halfway through for consistent cooking.
  2. While the beets roast, mix balsamic vinegar and honey (or maple syrup) in a small bowl.
  3. Once the beets are tender, drizzle the balsamic mixture over them and stir to coat evenly.
  4. Return to the oven for an additional 10 minutes, stirring halfway through this final roasting.
Serving

Notes
