  • 2 cups Carrots, sliced Baby carrots can also be used for ease.
  • 3 tablespoons Olive Oil Substitute with avocado oil if desired.
  • 3 cloves Garlic, minced Feel free to adjust the amount to taste.
  • 1 teaspoon Salt Adjust to your taste.
  • 1 teaspoon Black Pepper Adjust to your taste.

Preparation
  1. Preheat the oven to 425°F (220°C). This high temperature will help achieve that perfect caramelization.
  2. Cut the broccoli into florets and slice the carrots. Aim for even sizes to ensure they cook uniformly.
  3. In a bowl, toss the broccoli and carrots with olive oil, minced garlic, salt, and pepper until evenly coated.
Cooking
  1. Spread the vegetables on a baking sheet in a single layer. Avoid overcrowding to prevent steaming.
  2. Roast in the preheated oven for 20-25 minutes, or until tender and lightly caramelized, stirring halfway through for even cooking.

Notes
