Preparation
- Preheat the oven to 350º Fahrenheit (175º Celsius).
- Cut the pumpkin in half lengthwise, remove the stem, seeds, and 'innards,' then slice into large wedges about 3-4 inches in size.
- Place the pumpkin wedges in a spacious baking dish or tray to allow even cooking.
Making the Sauce
- In a saucepan over medium heat, melt the ghee or butter until fully liquefied.
- Stir in honey, cinnamon, thyme, salt, pepper, chili powder, and nutmeg, combining until the mixture is gently bubbling.
- Add the chopped pecans to the bubbling sauce and let it simmer for 2 minutes before removing from heat.
Baking
- Spoon the sauce generously over each pumpkin wedge, ensuring they are well coated.
- Transfer the coated wedges to the oven and bake for approximately 30 minutes, until tender and easily pierced with a knife.
- Once tender, remove the tray from the oven and drizzle any excess sauce over the pumpkin wedges for added flavor.
Serving
- Finish with sprigs of fresh thyme for a pop of color and flavor before serving.
Notes
Select sugar pumpkins for the best flavor. Cut the pumpkin into uniform wedges for even cooking. Experiment with different herbs like sage or rosemary for variation.
