Method
 

Preparation
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel the sweet potatoes and slice them into 1/2-inch thick rounds.
  3. Arrange the rounds on the baking sheet in a single layer.
Roasting
  1. Drizzle with olive oil and season with salt, pepper, and cinnamon if using.
  2. Roast in the oven for 20-25 minutes, flipping halfway through, until golden and tender.
Serving
  1. Transfer to a serving platter and drizzle with honey.
  2. Sprinkle crumbled feta and chopped parsley on top.
  3. Serve immediately while warm.

Notes

Store leftover roasted potatoes in an airtight container in the fridge for up to four days. Reheat in the oven for the best flavor and texture.
