  • 4 oz salami, diced Feel free to substitute with turkey salami for a lighter option.
  • 4 oz mozzarella cheese, cubed Alternatives include feta or cheddar.
  • 1 cup cherry tomatoes, halved Grape tomatoes also work well.
  • 1/2 cup black olives, sliced Green olives can be substituted for a different taste.
  • 1/4 cup red onion, diced You can use green onions for a milder flavor.
  • 1/4 cup olive oil Extra virgin is ideal for a touch of richness.
  • 2 tbsp red wine vinegar Balsamic vinegar is a sweeter alternative.
  • 1 tsp Italian seasoning Fresh herbs like basil can also be used.
  • Salt and pepper to taste Essential for balancing flavors.
  • Fresh basil for garnish Parsley can also be a great substitute.

Method
 

Preparation
  1. Boil the tortellini according to package instructions until al dente, usually about 3-5 minutes. Drain and let cool to avoid sticking.
  2. In a large mixing bowl, gently combine the cooked tortellini with diced salami, cubed mozzarella, halved cherry tomatoes, sliced black olives, and diced red onion.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the pasta and toss to combine evenly.
  5. Taste the salad and adjust seasoning if necessary, adding more salt or pepper as desired.
  6. Cover and chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be served as a main dish or a side. Pair it with grilled chicken or fish for a complete meal. Store leftovers in an airtight container in the fridge for up to three days.
