  • 2 tablespoons lime juice Brightens the flavors; can use lemon juice for a different citrus flair.
For the Salmon
  • 2 lbs salmon fillets The star of the dish; look for skin-on fillets for better grilling.

Method
 

Prepare Mango Salsa
  1. Stir together the mango, cilantro, parsley, red pepper flakes, vegetable oil, and lime juice. Season with salt and black pepper to taste.
Grill Salmon
  1. Preheat a grill or grill pan to medium-high heat. Lightly oil the hot grill.
  2. Season the salmon with salt and black pepper, then lightly brush it with oil.
  3. Grill the salmon, skin side up, until it begins to turn opaque, about 4 to 6 minutes.
  4. Flip the salmon and cook until opaque throughout, about 4 to 6 minutes.
  5. Transfer to a platter, spoon mango salsa over the top, and serve.

Notes

To enhance flavor, marinate the salmon in lime juice and salt for 30 minutes before grilling. Let the salsa rest for 10 minutes before serving. Serve with grilled vegetables or quinoa for a wholesome meal. Store leftovers in separate airtight containers for up to 2 days in the refrigerator.
