Preparation
  1. Preheat the grill to medium-high (approximately 375°F) to ensure perfect grill marks.
  2. In a bowl, combine the diced mango, red onion, bell pepper, jalapeño, lime juice, salt, and pepper. Mix well to create the salsa. Chill before serving for best flavor.
  3. Lightly coat the salmon fillets with olive oil and season with salt and pepper to keep the salmon moist during grilling.
Cooking
  1. Place the salmon on the grill and cook for about 4-5 minutes on each side or until cooked through and flaky.
  2. Once grilled, top the salmon with the fresh mango salsa and garnish with chopped cilantro if desired.

Notes

Serve the grilled salmon atop a bed of greens or alongside quinoa. Store leftovers separately to maintain freshness, and consider gentle reheating. This dish is great for meal prep and can be prepared in advance.
