  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the chicken pieces and cook for about 5 to 7 minutes, stirring occasionally until fully cooked.
  3. Stir in the diced red bell pepper and cook for an additional minute until softened.
  4. Incorporate the salsa and black beans, then sprinkle in the cumin and black pepper. Adjust salt if necessary.
  5. Allow to simmer for about 3 minutes, until heated through and flavors meld.
  6. Garnish with sliced green onions and cilantro, and optional avocado and cheese. Serve immediately.

Notes

Ensure the pan is hot to achieve a nice sear on the chicken. Marinating chicken in lime juice and cumin adds extra flavor. This dish can be made vegetarian by substituting chicken with tofu or tempeh.
