Salad Base
  • 2 cups sauerkraut A tangy, fermented cabbage that is rich in probiotics.
  • 2 medium apples Offers a sweet crunch; use varieties like Granny Smith or Fuji.
  • 1 medium onion Adds sharpness; soak in cold water if desired to reduce pungency.
  • 1/4 cup chives Delivers a mild onion flavor.
Dressing
  • 1/4 cup sunflower oil Provides a light, nutty flavor.
  • 2 tablespoons honey Adds subtle sweetness; can substitute with maple syrup for a vegan version.
  • 1/2 teaspoon salt Enhances flavors.

Method

Preparation
  1. Combine the sauerkraut, apples, onions, and chives in a large bowl and stir to combine.
  2. In a separate bowl, whisk together the sunflower oil, honey, and salt until well blended.
  3. Pour the dressing over the vegetable mixture and stir to combine evenly.
  4. Taste and adjust seasoning, adding more salt if needed.
  5. Cover the salad and refrigerate for at least one hour to let the flavors meld.

Notes

To maintain apple crispness, add them just before serving. Avoid overly sweet apples that may overpower the salad.
