For the casserole
  • 1 lb bulk breakfast sausage Provides rich flavor and protein.
  • 1/4 cup all purpose flour Helps thicken the mixture.
  • 1 cup milk or half and half Adds creaminess.
  • 28 oz frozen shredded hash brown potatoes Serves as the hearty base.
  • 1/3 cup green onions Adds sharp flavor.
  • 1.5 cups grated sharp cheddar cheese Creates a rich topping.

Method
 

Preparation
  1. Preheat the oven to 350°F and butter an 8x8x2 inch glass baking dish.
  2. In a large skillet over medium-high heat, cook the breakfast sausage until browned, breaking into small pieces for about 5 minutes.
  3. Sprinkle flour over the cooked sausage, stir, and cook for 1 minute.
  4. Pour in milk or half and half, stirring constantly, and cook until the mixture thickens and starts boiling, about 5 minutes. Remove from heat.
  5. Evenly spread the frozen shredded hash browns in the prepared baking dish.
  6. Sprinkle one third of the green onions over the hash brown layer.
  7. Layer 1 cup of grated cheddar cheese on top of the hash browns.
  8. Add another third of the green onions for flavor.
  9. Evenly pour the sausage mixture over the layered ingredients.
  10. Top with the remaining 1/2 cup of grated cheddar cheese.
  11. Place the dish in the preheated oven and bake until potatoes are tender and cheese is melted, about 45 minutes.
  12. Remove from the oven, sprinkle with remaining green onions, and let it rest for 5-10 minutes before serving.

Notes

Use high-quality sausage for best flavor. You can prepare ahead of time and refrigerate overnight.
