- In a large skillet over medium heat, cook the ground breakfast sausage until browned and cooked through. Drain any excess grease and set aside.
- If using, sauté chopped onions and bell peppers in the same skillet until soft, about 3–4 minutes.
- In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper until smooth.
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray or butter.
- Spread the thawed hash browns evenly in the dish, followed by the sausage, sautéed veggies, and half the shredded cheese.
- Pour the egg mixture evenly over the top and gently press ingredients down with a spatula to soak in the flavors.
- Sprinkle the remaining cheese on top.
- Bake for 40–45 minutes until the center is set and the top is golden brown.
- Let it rest for 10 minutes before slicing and serving. Garnish with fresh parsley or green onions if desired.
