Preparation
  1. In a large skillet over medium heat, cook the ground breakfast sausage until browned and cooked through. Drain any excess grease and set aside.
  2. If using, sauté chopped onions and bell peppers in the same skillet until soft, about 3–4 minutes.
  3. In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray or butter.
  5. Spread the thawed hash browns evenly in the dish, followed by the sausage, sautéed veggies, and half the shredded cheese.
  6. Pour the egg mixture evenly over the top and gently press ingredients down with a spatula to soak in the flavors.
  7. Sprinkle the remaining cheese on top.
  8. Bake for 40–45 minutes until the center is set and the top is golden brown.
  9. Let it rest for 10 minutes before slicing and serving. Garnish with fresh parsley or green onions if desired.

Preparing the casserole the night before saves time and ensures a delicious meal awaits in the morning. Customize with your favorite ingredients like spinach or zucchini. Can be frozen for later.
