Preparation
  1. Cook the sausage links in a skillet over medium heat until browned and fully cooked, about 10-12 minutes.
  2. While the sausages are cooking, beat together the eggs, milk, and cinnamon in a bowl.
  3. Slice the French bread into 1-inch thick slices.
  4. Remove the cooked sausage from the skillet and allow it to cool slightly, then cut each link in half.
Cooking
  1. Using a rolling pin, flatten each slice of French bread.
  2. Place half a sausage link on one end of a flattened slice of bread, then roll it up tightly.
  3. Heat butter in a skillet over medium heat.
  4. Dip each roll-up in the egg mixture, ensuring it’s well-coated, and place it seam-side down in the skillet.
  5. Cook until golden brown on all sides, about 2-3 minutes per side.
Serving
  1. Once cooked, remove the roll-ups from the skillet and place them on a serving platter.
  2. Drizzle with maple syrup if desired.
  3. Serve warm for the best flavor and texture experience.

Notes

Use day-old bread for better texture; it holds up well while cooking. Refrigerate any leftovers in an airtight container for optimal freshness. For longer storage, you can freeze the roll-ups.
