  • 1 tbsp olive oil For sautéing; can substitute with any cooking oil you prefer.
  • 1 lb kielbasa, cut into slices Adds savory depth; turkey kielbasa works well for a lighter option.
  • 1 each yellow onion, diced Sweetens the broth; shallots can be used for a milder taste.
  • 3 cloves garlic, minced Provides aroma and flavor; garlic powder can be a quick substitute.
  • 2 each carrots, peeled and cut into half-moons Adds sweetness; feel free to add parsnips for a unique twist.
  • 5 medium waxy potatoes, peeled and cut into bite-sized pieces Gives a hearty texture; use Yukon Gold or red potatoes for best results.
  • 1 tsp sweet paprika Adds warmth; smoked paprika can also create a nice smoky flavor.
  • 1 tsp dried marjoram Brings floral notes; oregano can work as an alternative.
  • 1 can (14 oz) white beans Provides protein; chickpeas or lentils can replace them if desired.
  • 5 cups chicken broth Makes a flavorful base; vegetable broth can be used for a vegetarian option.
  • ½ cup cream cheese, at room temperature Adds creaminess; sour cream or Greek yogurt can substitute for tartness.
  • ½ tsp black pepper Provides the necessary seasoning; adjust to taste.
  • 2 tbsp chopped dill Enhances flavor; parsley can serve as an alternative.

Preparation
  1. Get your prep done before cooking: Slice the kielbasa, peel and cut the potatoes, and chop the vegetables.
Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced kielbasa and brown for about 5 minutes. Remove and set aside.
  3. Add onion, garlic, and carrots to the pot, sauté for about 3 minutes.
  4. Add potatoes, white beans, paprika, and marjoram, then pour in chicken broth.
  5. Bring to a boil, cover, and simmer for about 15 minutes.
  6. Stir in cream cheese until blended, then return kielbasa to pot.
  7. Season to taste with black pepper and adjust flavors as desired.
  8. Serve warm and enjoy!

Notes

For extra flavor, cook the kielbasa until it has a nice caramelized edge. Don’t rush the cream cheese blending; ensure it dissolves fully for a creamy texture.
