Chicken Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, combine honey, chipotle powder, olive oil, garlic powder, salt, and pepper to create a marinade.
- Generously coat the chicken with the marinade and let it rest for at least 30 minutes.
Potato Preparation
- Peel and chop the potatoes into even chunks.
- Place potatoes in a pot filled with cold salted water and bring to a boil.
- Cook until tender, about 15-20 minutes.
Mashing the Potatoes
- Drain the potatoes and return them to the pot.
- Add milk, smoked gouda, and butter.
- Mash to desired consistency and season with salt and pepper to taste.
Baking the Chicken
- Heat a large ovenproof skillet over medium-high heat and sear the chicken thighs skin-side down for about 5 minutes.
- Flip the chicken and transfer the skillet to the preheated oven, roasting for 25-30 minutes until cooked through.
Serving
- Serve the chicken thighs alongside the smoked gouda mashed potatoes.
- Drizzle any remaining glaze from the pan over the chicken.
