For the Mashed Potatoes
  • 2 pounds Russet Potatoes High starch content ideal for mashing.
  • 1/2 cup Milk Cream or plant-based milk can be used.
  • 1 cup Smoked Gouda Cheese Can substitute with sharp cheddar.
  • 4 tablespoons Unsalted Butter Salted can enhance flavor.

Method
 

Chicken Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, combine honey, chipotle powder, olive oil, garlic powder, salt, and pepper to create a marinade.
  4. Generously coat the chicken with the marinade and let it rest for at least 30 minutes.
Potato Preparation
  1. Peel and chop the potatoes into even chunks.
  2. Place potatoes in a pot filled with cold salted water and bring to a boil.
  3. Cook until tender, about 15-20 minutes.
Mashing the Potatoes
  1. Drain the potatoes and return them to the pot.
  2. Add milk, smoked gouda, and butter.
  3. Mash to desired consistency and season with salt and pepper to taste.
Baking the Chicken
  1. Heat a large ovenproof skillet over medium-high heat and sear the chicken thighs skin-side down for about 5 minutes.
  2. Flip the chicken and transfer the skillet to the preheated oven, roasting for 25-30 minutes until cooked through.
Serving
  1. Serve the chicken thighs alongside the smoked gouda mashed potatoes.
  2. Drizzle any remaining glaze from the pan over the chicken.
