- In a large pan or dutch oven, heat the olive oil over medium heat.
- Add the chicken breasts or thighs, searing each side until golden brown, about 3-4 minutes per side.
- Sprinkle the spices over the chicken, coating evenly.
- Pour the chicken broth over the mixture.
- Cover the pot and lower the heat to simmer for about 20-30 minutes until the chicken is cooked through and tender.
- Remove the chicken, shred it with two forks, and return it to the pot to soak in the juices. Cook for an additional 5 minutes.
- Serve warm in tacos, over rice, or incorporate into a salad.
Notes
