Main Ingredients

Method
 

Preparation
  1. In a large pan or dutch oven, heat the olive oil over medium heat.
  2. Add the chicken breasts or thighs, searing each side until golden brown, about 3-4 minutes per side.
  3. Sprinkle the spices over the chicken, coating evenly.
  4. Pour the chicken broth over the mixture.
  5. Cover the pot and lower the heat to simmer for about 20-30 minutes until the chicken is cooked through and tender.
  6. Remove the chicken, shred it with two forks, and return it to the pot to soak in the juices. Cook for an additional 5 minutes.
  7. Serve warm in tacos, over rice, or incorporate into a salad.

Notes

For added richness, consider incorporating a splash of lime juice. Experiment with different toppings like cilantro, jalapeƱos, or sour cream for added texture and flavor. Use leftovers in a soup or casserole for a different meal later.
