Ingredients
  

  • 10 large eggs
  • 1/3 cup whole milk
  • 1/2 teaspoon garlic powder
  • Salt & pepper to taste
  • 6 halal turkey sausage patties
  • 6 slices cheddar cheese
  • 6 brioche buns
  • 1 tablespoon olive oil
  • Optional: spinach, mushrooms, chives

Equipment

  • sheet pan 9x13, for baking eggs
  • whisk for beating eggs
  • Foil or parchment for clean wrapping or baking

Method
 

  1. Preheat oven to 350°F. Line a 9x13 sheet pan with parchment paper.
  2. Whisk eggs, milk, garlic powder, salt and pepper. Pour into prepared pan.
  3. Bake for 15–18 minutes, until just set. Cool and slice into squares.
  4. Meanwhile, cook turkey sausage in skillet until browned.
  5. Assemble each sandwich with egg, sausage, cheese and brioche bun.
  6. Serve warm or wrap and store for later.

Notes

Wrap sandwiches individually for easy grab-and-go mornings. Reheat in the microwave with a damp towel or in the oven for best texture.
