Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced sweet onion and cook for approximately 5 minutes or until translucent.
  3. In a medium bowl, mash the black beans with a fork until somewhat smooth.
  4. Stir the minced garlic and shredded chicken into the skillet with the onions.
  5. Mix in the mashed beans and taco seasoning, and cook for 3 minutes, stirring to combine.
  6. Stir in the Greek yogurt and minced cilantro until evenly coated, then remove from heat.
Taco Assembly
  1. In a separate pan, heat each tortilla over medium heat until golden and crispy, about 1 to 2 minutes each.
  2. On each warm tortilla, sprinkle cheddar cheese, add a spoonful of the chicken mixture, and top with optional ingredients like tomatoes.
  3. Fold the tortilla in half and place it on a plate. Repeat with remaining tortillas and filling.
  4. Garnish with thinly sliced lettuce if desired for extra crunch.

Notes

Use pre-cooked chicken for a speedier meal. Warming the tortillas enhances their flavor and makes them easier to fold. Experiment with different toppings like avocado, jalapeños, or lime for a twist.
