  • 0.25 pound small cooked shrimp Ensure they’re fresh for the best flavor.
  • 1 teaspoon Dijon mustard Provides a tangy kick; yellow mustard can work in a pinch.
  • 1/8 teaspoon garlic powder For subtle depth; fresh minced garlic is an option for a stronger flavor.
  • 1/8 teaspoon kosher salt Enhances all the flavors; adjust to taste.
  • 1 tablespoon minced flat-leaf parsley For garnish and a fresh touch; chives can be a wonderful alternative.
  • to taste spices Paprika A sprinkle adds color; smoked paprika can elevate the flavor even more.

Method
 

Preparation
  1. Cut each hard-boiled egg in half lengthwise. Gently remove the yolks and place them in a medium-sized bowl.
  2. Smash the yolks with the back of a fork until fairly smooth before adding in the light mayonnaise and Dijon mustard.
  3. Set aside 12 of the small shrimp whole for garnish. Chop the remaining shrimp into small pieces and stir them into the egg yolk mixture, followed by the garlic powder and kosher salt. Taste and adjust the seasoning to your liking.
  4. Spoon or pipe the filled mixture back into the egg white halves.
  5. Crown each filled egg with a whole shrimp and garnish with fresh flat-leaf parsley and a sprinkle of paprika.
  6. Serve these delicious morsels and watch them disappear!

Notes

Chill the deviled eggs before serving for a refreshing bite. Pair with a light cocktail or sparkling beverage.
