Preparation
- Whisk together the olive oil, honey, garlic, parsley, paprika, lime zest, red pepper flakes, salt, and pepper in a small bowl.
- Reserve a few tablespoons of the marinade now if you like to use some as a finishing sauce.
- Place the shrimp in a large zip-lock bag and pour the marinade over them.
- Seal the bag and refrigerate for at least 15 to 20 minutes, or ideally up to 1 hour for maximum flavor absorption.
Cooking
- When ready to cook, drain the marinade and discard it.
- Grill or sauté the shrimp for 2-3 minutes per side or until they turn pink and are fully cooked.
- Transfer to a serving platter and give a final squeeze of fresh lime juice to enhance the flavors.
Notes
Don’t marinate shrimp for too long; over-marinating can make them mushy. Ensure shrimp are fully thawed for optimal flavor. Adjust spices according to your heat tolerance. Serve over rice or pasta for a complete meal.
