  • 1 large ripe avocado Ensure it's perfectly ripe for the best creaminess.
  • 8 oz small shrimp Thawed if frozen, cooked until tender.
  • 2 tbsp mayonnaise Adds creaminess and a slight tang.
  • 1 tbsp ketchup Contributes sweetness and acidity.
  • to taste salt Enhances flavor.
  • to taste black pepper Adds a touch of heat.
  • 1 tbsp fresh Italian parsley Chopped, for garnish.

Method
 

Preparation
  1. Boil the shrimp in a pot of boiling water until tender for approximately 2-3 minutes.
  2. Drain the shrimp and rinse them under cold water to stop the cooking process. Drain well and towel dry.
  3. In a small bowl, combine the mayonnaise and ketchup. Mix until well blended.
  4. Carefully cut the avocado lengthwise around the pit, remove the pit, and cube the flesh without cutting through the skin.
  5. Place the avocado cubes in a medium bowl, add the cooled drained shrimp and the mayonnaise mixture, and gently combine.
  6. Season the mixture with salt and black pepper to taste, mixing lightly to incorporate.
  7. Spoon the shrimp mixture into the empty avocado shells, filling them generously.
  8. Garnish with finely chopped fresh parsley before serving.

Notes

Serve immediately or with crusty Italian bread or a refreshing salad. For added flavor, consider marinating the shrimp briefly before boiling.
