Phase 1 – Prep
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground beef and ground pork.
- Add finely chopped onion and minced garlic, mixing everything thoroughly.
- In a separate bowl, whisk the eggs and then add them to the meat mixture along with breadcrumbs, Parmesan cheese, parsley, dried oregano, salt, and pepper.
- Mix well until all ingredients are just combined—do not overmix!
- Let the mixture rest for about 10 minutes to help the flavors meld together.
Phase 2 – Cook/Assemble
- Shape the meat mixture into a loaf and place it in a pan lined with parchment paper.
- Spread marinara sauce evenly over the top of the meatloaf.
- Sprinkle shredded mozzarella cheese on top of the sauce.
- Bake for 1 hour, or until the internal temperature reaches 160°F (71°C) and the cheese is bubbly.
- Let it rest for 10 minutes before slicing to help retain moisture.
Phase 3 – Serve
- Slice the meatloaf with a sharp knife.
- Serve warm, topped with extra marinara sauce if desired.
- Garnish with additional chopped parsley for freshness.
Notes
For best results, don't overmix the ingredients and allow the meatloaf to rest before slicing. Store leftovers for up to 4 days.
