Method

Phase 1 – Prep
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef and ground pork.
  3. Add finely chopped onion and minced garlic, mixing everything thoroughly.
  4. In a separate bowl, whisk the eggs and then add them to the meat mixture along with breadcrumbs, Parmesan cheese, parsley, dried oregano, salt, and pepper.
  5. Mix well until all ingredients are just combined—do not overmix!
  6. Let the mixture rest for about 10 minutes to help the flavors meld together.
Phase 2 – Cook/Assemble
  1. Shape the meat mixture into a loaf and place it in a pan lined with parchment paper.
  2. Spread marinara sauce evenly over the top of the meatloaf.
  3. Sprinkle shredded mozzarella cheese on top of the sauce.
  4. Bake for 1 hour, or until the internal temperature reaches 160°F (71°C) and the cheese is bubbly.
  5. Let it rest for 10 minutes before slicing to help retain moisture.
Phase 3 – Serve
  1. Slice the meatloaf with a sharp knife.
  2. Serve warm, topped with extra marinara sauce if desired.
  3. Garnish with additional chopped parsley for freshness.

Notes

For best results, don't overmix the ingredients and allow the meatloaf to rest before slicing. Store leftovers for up to 4 days.
