Preparation
  1. In a bowl, whisk together the olive oil, lemon juice, chopped herbs, minced garlic, salt, and pepper until well combined.
  2. Place chicken, fish, or veggies in a re-sealable plastic bag or shallow dish. Pour the marinade over the top, ensuring everything is well coated.
  3. Seal and refrigerate for at least 30 minutes, or up to 4 hours for chicken or fish, and about an hour for veggies.
  4. Cook as desired - grill, bake, or sauté ensuring chicken reaches an internal temperature of 165°F, fish flakes easily with a fork, and veggies are tender yet crisp.
  5. Serve and enjoy with your family!

Notes

Always prepare a double batch of the marinade for future use. For added flavor, consider adding a teaspoon of Dijon mustard or a dash of red pepper flakes.
