  1. In another bowl, mix the wet ingredients: milk, melted butter, and eggs.
  2. Slowly pour the wet mixture into the dry mixture. Stir gently until just combined; it's okay if the batter is a bit lumpy.
  3. Heat your non-stick pan over medium heat and lightly coat with cooking spray or butter.
  4. Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden.

Notes

Don’t overmix the batter; lumps are okay. Keep cooked pancakes warm in a 200°F oven if making a larger batch. Prepare dry ingredients in advance for quick breakfasts.
