Preparation
- Generously season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium heat.
Cooking
- Add the chicken to the hot skillet and cook until golden brown, about 6-7 minutes per side.
- Remove chicken from the skillet and set aside on a plate.
- In the same skillet, reduce heat slightly, melt butter, and scrape up any brown bits from the chicken.
- Stir in minced garlic and sauté until fragrant, about 1 minute.
- Mix lemon juice, lemon zest, and chicken broth in the skillet.
- Return chicken to the skillet, ensuring it's partially submerged in the liquid. Simmer for about 5 minutes, or until cooked through.
- Toss in the chopped dill right before serving.
Notes
Serve alongside a light salad, quinoa or rice for a complete meal. Can be frozen for up to 3 months.
