Preparation
  1. Generously season chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium heat.
Cooking
  1. Add the chicken to the hot skillet and cook until golden brown, about 6-7 minutes per side.
  2. Remove chicken from the skillet and set aside on a plate.
  3. In the same skillet, reduce heat slightly, melt butter, and scrape up any brown bits from the chicken.
  4. Stir in minced garlic and sauté until fragrant, about 1 minute.
  5. Mix lemon juice, lemon zest, and chicken broth in the skillet.
  6. Return chicken to the skillet, ensuring it's partially submerged in the liquid. Simmer for about 5 minutes, or until cooked through.
  7. Toss in the chopped dill right before serving.

Notes

Serve alongside a light salad, quinoa or rice for a complete meal. Can be frozen for up to 3 months.
