Ingredients
  

Pasta Base
  • 12 ounces whole wheat or protein pasta Consider gluten-free pasta if needed.
Main Filling
  • 1 pound lean ground beef Ground turkey or chicken can be a lighter alternative.
  • 1 sweet onion (finely diced) Shallots can replace it if preferred.
  • 2-3 garlic cloves (minced) Garlic powder works in a pinch.
  • 15 ounces tomato sauce Homemade sauce can elevate flavor.
  • 1 cup sugar-free spicy or classic ketchup BBQ sauce is a tasty alternative.
  • 1 tablespoon dijon mustard Yellow mustard may suffice if that’s what you have.
  • Kosher salt and pepper (to taste) Essential for seasoning; remember to taste while cooking!
Topping
  • 1 cup cheddar cheese (shredded) Use mozzarella for a different flavor.

Method
 

Preparation
  1. Preheat your oven to 375ºF.
  2. Cook the pasta in salted water according to package timing. Once complete, reserve 1 cup of water, then drain the pasta and place it in a baking dish.
Cooking
  1. In a deep skillet over medium heat, cook the ground beef. Stir in the chopped onion and minced garlic until the beef is no longer pink and mixture starts to brown.
  2. Add tomato sauce, ketchup, mustard, along with salt and pepper. Allow the sauce to boil, then reduce to a gentle simmer.
  3. Pour in the reserved pasta water and let the mixture simmer for 10 minutes.
Assembly and Baking
  1. Pour this sauce over the pasta in the baking dish until well combined.
  2. Top with cheddar cheese and bake for 12-15 minutes, or until the cheese is melted and the casserole is bubbly.

Notes

Serve hot, pair with a crisp side salad or roasted vegetables. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months.
