Method
 

Preparation
  1. Preheat the oven to 300°F (150°C).
  2. Season the beef brisket generously with salt, pepper, paprika, and thyme.
Cooking
  1. In a large oven-safe pot, heat olive oil over medium heat.
  2. Sear the brisket on both sides until browned (about 5 minutes per side).
  3. Remove the brisket and set aside.
  4. In the same pot, add onions and garlic, sauté until softened.
  5. Deglaze the pot with Worcestershire sauce and beef broth.
  6. Place the brisket back in the pot, cover, and transfer to the oven.
  7. Cook for 3-4 hours, or until tender.
  8. Let rest before slicing, and serve with cooking juices.

Notes

Best served sliced against the grain to ensure tenderness. Leftovers can be stored for up to 4 days and frozen for 2-3 months.
