Cooking
  1. In the slow cooker, combine the diced chicken, sliced sausage, shrimp, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, salt, black pepper, and cayenne pepper.
  2. Stir well to combine the ingredients.
  3. Cover and cook on low for 6-8 hours, or high for 3-4 hours, until the rice is tender, and the flavors meld perfectly.
  4. Stir gently before serving to fluff the rice and mix all ingredients.
  5. Garnish with sliced green onions.

Notes

For a quick meal, use pre-diced vegetables. This dish stores well, making it ideal for meal prep. Serve warm with crusty bread or cornbread.
