  • 1 lb Chicken Breasts Can substitute with thighs for a richer flavor.
  • 3 cups Carrots Frozen or fresh work well.
  • 2 cups Potatoes Can substitute with sweet potatoes for a twist.
  • 1 cup Celery Skip if you’re not a fan.
  • 1 cup Onion Shallots can substitute perfectly.
  • 4 cloves Garlic Use garlic powder instead if fresh isn't available.
  • 4 cups Chicken Broth Vegetable broth works too.
  • 1 teaspoon Thyme Dried versions are fine if fresh isn't available.
  • 1 teaspoon Rosemary Dried versions are fine if fresh isn't available.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.

Method
 

Preparation
  1. Place the diced chicken, carrots, potatoes, celery, onion, and garlic in the slow cooker.
  2. Pour in the chicken broth and add thyme, rosemary, salt, and pepper.
  3. Stir everything to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 4 hours.
  2. Taste and adjust seasonings before serving. Enjoy your comforting bowl of chicken stew!

Notes

Be sure to plan ahead! Leftover roast chicken can speed up prep. To thicken the stew, blend a cup of it and stir back in. Can be served hot with fresh parsley or thyme as garnish, and pairs well with crusty bread.
