Preparation
  1. In a skillet over medium heat, brown the ground beef along with the diced onion until fully cooked; drain excess fat.
  2. In a slow cooker, layer the diced potatoes, cooked ground beef with onions, beans, cream of mushroom soup, corn, and taco seasoning.
  3. Stir to combine and season with salt and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  2. Sprinkle shredded cheese on top and let it melt before serving.

Notes

For added flavor, consider sautéing garlic or jalapeños with the ground beef. Always adjust seasoning toward the end; flavors develop as they cook. Avoid overcrowding the slow cooker and don’t skip browning meat beforehand for added flavor.
