  • 4 cups chicken broth Use homemade for depth, or low-sodium canned for ease.
  • 1 tablespoon Italian seasoning A blend of basil, oregano, and thyme enhances overall flavor.
  • Salt and pepper To taste.

Method
 

Preparation
  1. In a slow cooker, combine the diced potatoes, trimmed green beans, and chopped onion.
  2. Cut the sausage into slices and add to the cooker.
  3. Pour in the chicken broth and sprinkle the Italian seasoning over the top.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender and the sausage is cooked through.
  6. Serve with crusty bread or a fresh salad.

Notes

Stir occasionally to evenly distribute flavors. Browning the sausage before adding heightens flavor complexity. This dish tastes even better when made a day ahead.
