Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the egg yolk and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them at least 2 inches apart.
Baking
  1. Bake for about 8-10 minutes, or until the edges are lightly golden.
  2. Allow to cool slightly before transferring to a wire rack.
  3. Decorate with sprinkles or frosting if desired.

Notes

Chill the dough for 30 minutes to enhance flavor and texture. Use a cookie scoop for even portions. Store leftover cookies in an airtight container for up to a week.
