Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg yolk and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them at least 2 inches apart.
Baking
- Bake for about 8-10 minutes, or until the edges are lightly golden.
- Allow to cool slightly before transferring to a wire rack.
- Decorate with sprinkles or frosting if desired.
Notes
Chill the dough for 30 minutes to enhance flavor and texture. Use a cookie scoop for even portions. Store leftover cookies in an airtight container for up to a week.
