Method
 

Preparation
  1. Preheat your air fryer to 400°F. Toss the diced potatoes with olive oil, salt, and pepper until well-coated.
  2. Air fry the potatoes for 16–18 minutes, shaking the basket halfway through, until they are golden and crispy.
  3. While the potatoes are cooking, heat a skillet over medium-low heat, add a little olive oil and diced onions. Cook for 10–15 minutes, stirring occasionally, until the onions are soft and golden. Remove from heat and set aside.
  4. In the same skillet, increase the heat to medium-high. Add the ground beef, breaking it up as you go. Press it into the pan for crispy edges. Cook for 5–7 minutes until browned. Season with salt and pepper, and drain any excess fat if needed.
  5. In a small bowl, whisk together the mayonnaise, ketchup, mustard, and Cajun seasoning until smooth. Adjust the seasoning to your taste if needed.
Assembly
  1. Divide the crispy potatoes into bowls.
  2. Top them with cooked beef, caramelized onions, and shredded cheese.
  3. Drizzle with the special sauce and finish with chopped lettuce and optional toppings like pickles.

Notes

For extra flavor, consider marinating the beef for a few hours with herbs and spices. Use an air fryer for the potatoes to cut down on oil and calories without sacrificing that nice crisp.
