Prepare the Sauce
- In a bowl, stir together the mayonnaise, ketchup, sweet pickle relish, yellow mustard, white vinegar, paprika, onion powder, and garlic powder. Cover and refrigerate.
Prepare the Beef
- In a separate bowl, combine the ground beef with salt, black pepper, and garlic powder. Mix gently and divide into 8 portions.
Cook the Tacos
- Press one portion of beef onto one side of each tortilla.
- Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add tacos meat-side down and cook for 4-5 minutes until browned.
- Flip the tacos, sprinkle with cheddar cheese, and cook for another 2-3 minutes until the tortilla is crisp, and cheese melts.
- Remove from the skillet and repeat with the remaining tacos.
Assemble the Tacos
- Fill each taco with shredded lettuce, diced tomatoes, and green onions. Drizzle with the sauce and serve immediately.
Notes
Leftover Smashed Burger Tacos should be stored in an airtight container in the refrigerator and consumed within 3 days. Reheat them in the skillet for best results, ensuring the tortillas stay crisp.
