Method
 

Preparation
  1. In a bowl, combine ground pork, green onions, garlic, ginger, soy sauce, sesame oil, sugar, salt, and black pepper. Mix gently until combined.
Assembly
  1. Lay tortillas on a work surface. Divide the filling evenly among them, spreading 2 to 3 tablespoons of filling over one side of each tortilla.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a nonstick or cast iron skillet over medium heat. Place the tortillas meat side down and cook for 4 to 5 minutes, pressing gently.
  2. Flip the tacos and cook for an additional 2 to 3 minutes until the tortilla is crisp. Fold each tortilla in half and cook for another minute per side to crisp the edges.
  3. Transfer the cooked tacos to a plate and repeat with remaining filling and tortillas until they’re all ready to enjoy.
Dipping Sauce
  1. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, garlic, and chili oil (if using).
