Preparation
- Preheat the oven to 350°F.
- In a medium mixing bowl, combine the egg, pumpkin puree, coconut oil, and coconut sugar. Mix well until combined.
- Gradually incorporate almond flour, arrowroot starch, baking soda, pumpkin pie spice, and salt into the wet mixture. Gently mix until just combined.
- Carefully fold in the chocolate chips.
- Use a cookie dough scooper to portion out 12 balls of dough and place them onto a greased baking sheet.
Baking
- Place the cookie sheet in the preheated oven and bake for about 11–12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the sheet for 5 minutes before transferring them to a cooling rack.
Notes
For perfect cookies, consider using homemade pumpkin puree for a richer flavor. Chill the dough before scooping to help maintain shape while baking.
