Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the dry ingredients: all-purpose flour, sugar, baking powder, and salt.
  3. In another bowl, melt the unsalted butter and allow it to cool slightly.
  4. Whisk together the eggs, milk, and vanilla extract in the bowl with the melted butter.
Cooking
  1. Pour the wet ingredients into the dry ingredients and stir gently until just combined, being careful not to overmix; a few lumps are fine.
  2. Fill each muffin liner about 2/3 full with batter.
  3. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Serving
  1. Once baked, remove the muffins from the oven and allow them to cool in the tin for 5 minutes.
  2. Transfer the muffins to a wire rack to cool completely.
  3. Serve warm or at room temperature and enjoy!
