Pudding Base
  • 3 medium ripe bananas, sliced Perfectly ripe bananas provide the best flavor and creaminess.
  • 1 box vanilla wafers For that classic crunch and flavor.
  • 2 cups milk Use whole or 2% for a richer pudding.
  • 1 cup heavy cream Adds luxurious creaminess; can substitute with coconut cream for a dairy-free option.
  • 3/4 cup sugar Adjust sweetness based on your preference.
  • 1/4 cup cornstarch Essential for thickening the pudding.
  • 1 teaspoon vanilla extract Enhances the overall flavor profile.
  • 1 pinch salt Balances the sweetness.
  • 1/2 teaspoon banana extract Optional for an extra boost of banana flavor.

Method
 

Preparation
  1. In a saucepan, combine sugar, cornstarch, and a pinch of salt. Gradually whisk in the milk and cook over medium heat, stirring constantly until thickened (about 5-7 minutes). The mixture should coat the back of a spoon.
  2. Remove from heat and stir in the vanilla and, if using, the banana extract.
Layering
  1. In a glass dish or trifle bowl, layer the vanilla wafers, followed by sliced bananas, and a generous layer of the pudding mixture. Repeat this layering until you have used all the ingredients, finishing with the pudding on top.
Whipping Cream
  1. In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.
Chill
  1. Spread the whipped cream over the top of the pudding and chill in the refrigerator for at least 4 hours before serving.

Notes

For added richness, use whole milk and heavy cream. Let the dessert chill overnight for enhanced flavors. Tweak the sugar based on the sweetness of your bananas.
