Preparation
  1. In a mixing bowl combine all ingredients for the avocado topping. Taste and season with additional salt and pepper as desired. Chill before serving.
Grilling the Burgers
  1. Set the grill to the highest heat setting until it’s smoking hot.
  2. In a large mixing bowl, place ground beef and add the chorizo torn into small pieces.
  3. Incorporate Worcestershire sauce, dried onion, and crushed garlic into the meat mixture.
  4. Mix until just combined and form the mixture into 8 even patties.
  5. In a flat dish, combine salt, smoked paprika, cumin, dried cilantro, and cayenne pepper; swirl to combine.
  6. Place each patty into the spice mix and coat both sides thoroughly.
  7. Grill on high heat for about 2 minutes per side until a nice sear forms.
  8. Turn the heat to medium-low, moving the burgers away from direct heat. Grill over indirect heat for an additional 4-6 minutes, monitoring for doneness.
  9. During the last minute of grilling, place the buns cut-side down on the grill to toast.
  10. Remove buns and burgers to a foil-lined baking sheet. Cover the meat with foil; rest for about 5 minutes before serving.
  11. Top the burgers with the avocado mixture and enjoy!
