- In a mixing bowl combine all ingredients for the avocado topping. Taste and season with additional salt and pepper as desired. Chill before serving.
Grilling the Burgers
- Set the grill to the highest heat setting until it’s smoking hot.
- In a large mixing bowl, place ground beef and add the chorizo torn into small pieces.
- Incorporate Worcestershire sauce, dried onion, and crushed garlic into the meat mixture.
- Mix until just combined and form the mixture into 8 even patties.
- In a flat dish, combine salt, smoked paprika, cumin, dried cilantro, and cayenne pepper; swirl to combine.
- Place each patty into the spice mix and coat both sides thoroughly.
- Grill on high heat for about 2 minutes per side until a nice sear forms.
- Turn the heat to medium-low, moving the burgers away from direct heat. Grill over indirect heat for an additional 4-6 minutes, monitoring for doneness.
- During the last minute of grilling, place the buns cut-side down on the grill to toast.
- Remove buns and burgers to a foil-lined baking sheet. Cover the meat with foil; rest for about 5 minutes before serving.
- Top the burgers with the avocado mixture and enjoy!
Notes
