Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook 1 lb ground turkey over medium heat until browned, about 5-7 minutes.
  3. Add 1 can black beans, 1 cup corn, 1 packet taco seasoning, 1 cup diced tomatoes, and 1 cup cooked rice (if using) to the skillet. Mix well and cook for an additional 5 minutes.
  4. Pour the mixture into a baking dish and sprinkle 1 cup shredded cheese on top.
  5. Place the dish in the preheated oven and bake for 20-25 minutes or until the cheese is melted and bubbly.
  6. Serve hot with tortilla chips or a refreshing side salad.

Notes

For added nutrition, throw in some chopped spinach or bell peppers with the other vegetables. Leftovers taste even better the next day as the flavors continue to develop.
