Preparation
  1. Cook the pasta according to the package directions, drain, and set aside.
  2. Preheat the broiler to high heat.
Cooking
  1. In a large oven-safe skillet, heat olive oil over medium-high heat, then add ground beef and diced Vidalia onion. Cook until the beef is browned, about 5 to 7 minutes.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Incorporate the drained black beans, petite diced tomatoes, green chiles, sliced green onions, taco seasoning, and black pepper into the mixture.
  4. Fold in the cooked pasta, stirring to combine all ingredients well.
  5. Evenly sprinkle the grated cheddar cheese over the skillet and add jalapeño slices if desired.
  6. Place the skillet under the preheated broiler until the cheese is melted and bubbly, approximately 1 to 2 minutes.
Serving
  1. Remove from the broiler, garnish with reserved green onions and minced cilantro, and serve immediately.

Notes
