Ingredients
  

For the Meatballs
  • 1 pound skinless salmon (cut into chunks) Can substitute with ground turkey for a different flavor.
  • 3 cloves garlic (minced) Can replace with garlic powder if fresh isn’t available.
  • 2 teaspoons grated fresh ginger Dried ginger is an alternative, but fresh is preferred.
  • ½ teaspoon Chinese 5-spice powder Can use a mix of cinnamon and clove if necessary.
  • ½ teaspoon kosher salt Sea salt is a great substitute.
  • 1 large egg white A spoonful of flaxseed mixed with water can be a vegan option.
  • ¼ cup whole wheat panko breadcrumbs Gluten-free panko can be used.
  • 2 tablespoons minced flat-leaf parsley Can substitute with cilantro.
For the Sauce
  • 3 tablespoons soy sauce Tamari works for a gluten-free option.
  • 2 tablespoons honey Maple syrup can be a plant-based substitute.
  • 2 teaspoons grated fresh ginger Double dose ensures ginger flavor shines.
  • 1 teaspoon rice vinegar Apple cider vinegar can be used.
  • ¼ teaspoon garlic powder Optional for a milder flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the salmon chunks, minced garlic, grated ginger, 5-spice powder, kosher salt, egg white, and panko breadcrumbs. Mix gently until just combined.
  3. Shape the mixture into small meatballs (about the size of a golf ball) and place them on a parchment-lined baking sheet.
Baking
  1. Bake for 15-18 minutes, or until golden and cooked through.
Making the Sauce
  1. While the meatballs are baking, whisk together soy sauce, honey, remaining ginger, rice vinegar, and garlic powder in a small saucepan over medium heat.
  2. Allow the sauce to simmer for about 5 minutes, stirring occasionally, until it thickens slightly.

Notes

For a crispy exterior, broil the meatballs for the last 2 minutes of baking. Let them sit for a couple of minutes after cooking for better texture.
