Spaghetti Carbonara

Ingredients
  

Pasta
  • 400 g Spaghetti You can also use fettuccine or bucatini.
Sauce ingredients
  • 150 g Pancetta Diced into small pieces.
  • 3 large Eggs You will use the yolks only.
  • 100 g Pecorino Romano cheese Grated, can substitute with Parmesan if necessary.
  • 1 teaspoon Black pepper Freshly cracked for best flavor.

Method
 

Preparing the Ingredients
  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. In a separate pan, cook the pancetta over medium heat until crispy.
  3. In a bowl, whisk together the egg yolks, grated cheese, and black pepper.
Combining Ingredients
  1. Once the spaghetti is cooked, reserve some pasta water and drain the rest.
  2. Add the hot pasta to the pan with pancetta and remove from heat.
  3. Quickly mix in the egg mixture, adding reserved pasta water as needed to create a creamy sauce.
  4. Serve immediately, garnished with extra cheese and pepper.

Notes

Serve with a side salad for a complete meal. Be careful not to scramble the eggs when mixing them with the pasta.
