- In a bowl, whisk together eggs, grated parmesan, and black pepper until well combined.
Combining
- Once the pasta is cooked, reserve some pasta water and drain the rest.
- Add hot spaghetti to the pan with the pancetta and remove from heat.
- Quickly pour the egg mixture over the pasta, tossing gently to combine. Add reserved pasta water as needed to create a creamy sauce.
Serving
- Serve immediately with extra grated parmesan and black pepper on top.
