Pasta and Sauce Ingredients
  • 400 g spaghetti Use high-quality pasta for better texture.
  • 150 g pancetta Can substitute with bacon.
  • 3 large eggs Fresh eggs are recommended.
  • 100 g parmesan cheese Grated for easy mixing.
  • 1 tsp black pepper Freshly cracked for best flavor.

Method
 

Preparation
  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to package instructions until al dente.
  3. Meanwhile, in a pan, cook the pancetta until crispy.
  4. In a bowl, whisk together eggs, grated parmesan, and black pepper until well combined.
Combining
  1. Once the pasta is cooked, reserve some pasta water and drain the rest.
  2. Add hot spaghetti to the pan with the pancetta and remove from heat.
  3. Quickly pour the egg mixture over the pasta, tossing gently to combine. Add reserved pasta water as needed to create a creamy sauce.
Serving
  1. Serve immediately with extra grated parmesan and black pepper on top.

Notes

Enjoy this dish immediately for best taste. Can be garnished with fresh parsley if desired.
