Ingredients
  

For the Sauce
  • 3 tablespoon low sodium soy sauce
  • 1 tablespoon sriracha sauce Adjust for desired spiciness
  • 1 tablespoon honey Adds a touch of sweetness
  • 1 clove garlic Optional, can be minced
For the Zucchini Dish
  • 2 medium zucchini Cut into strips
  • 2 tablespoon sesame oil For cooking
  • 1 tablespoon sesame seeds For garnish
  • 2 stalks green onions Chopped, for garnish

Method
 

Preparation
  1. In a glass measuring cup, whisk together the soy sauce, sriracha, honey, and minced garlic.
  2. Preheat a large non-stick or cast iron skillet over medium-high heat and add sesame oil to coat the pan.
Cooking
  1. Place zucchini strips in the skillet in a single layer.
  2. Cook undisturbed for 2-3 minutes until browned on the bottom.
  3. Flip zucchini spears to brown the other side for an additional 2 minutes until tender.
  4. Pour half of the prepared sauce over the zucchini and toss for about a minute.
  5. If needed, add the remaining sauce, cooking for a few more seconds until everything is heated through.
  6. Remove from heat and garnish with sesame seeds and chopped green onions before serving.

Notes

For extra heat, add more sriracha. Ensure skillet is hot before cooking to prevent sogginess. This dish is best served fresh.
