Preparation
  1. In a mixing bowl, combine olive oil, Cajun seasoning, lemon juice, minced garlic, and salt to create the marinade.
  2. Place the halibut fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated.
  3. Cover the dish and marinate in the refrigerator for at least 30 minutes.
Cooking
  1. Heat the grill to medium-high heat, around 400°F (204°C).
  2. Remove the halibut from the marinade, letting any excess drip off.
  3. Place the fillets on the grill and cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
  4. Use a meat thermometer to check for doneness, ensuring the internal temperature reaches 145°F (63°C).
Serving
  1. Once cooked, remove the halibut from the grill and let it rest for a minute.
  2. Serve the grilled halibut with your choice of sides, paired with a fresh salad or grilled vegetables.
  3. Garnish with extra lemon wedges for added zing, if desired.

Notes

For the best results, marinate the halibut overnight and use oiled grill grates to prevent sticking. Consider doubling the recipe for meal prep, and add herbs or other fish types for variations.
